What a long week it was! Something that always gets me through is knowing that there is nothing that I have to do on Friday night. And knowing that there is pizza in the near future doesn’t hurt either!
After work, I made some pizza dough using Jenna’s recipe. I’ve made it before and it truly is the best pizza dough. This time I subbed oat flour for the whole wheat flour, though.
I used my Cuisinart Food Processor to mix the dough! Hooray for another fabulous wedding gift kitchen appliance!
After the dough was mixed, I put it in a bowl to rise:
It needed to rise for an hour, so Greg and I took the boys on a 4-mile walk. Vibrams? Check. Fanny Pack? Check. Awesome.
When we got back, the dough looked like this:
I rolled out a 3 oz ball for me, and a 5 1/2 oz ball for Greg. I like mine thin and crispy, he likes his a bit more chewy. Greg put the dough and cut up veggies on the grill and moments later our crusts were done:
We topped our pizzas with eggplant, red onion, mushroom, zucchini, red pepper and turkey bacon and smoked mozzarella. Actually, I used half mozzarella and half almond cheese (which tasted good but doesn’t melt well).

I have a confession. I like mustard on my pizza. I’ve put mustard on my pizza for as long as I can remember. It all started in elementary school: for some reason, it was the “cool” thing to do. And it just stuck with me.
People think it’s weird, and then they try it. And they love it! Think about it- people put banana peppers on pizza- it’s the same flavor!
I rented Love and Other Drugs from Redbox and will now attempt to stay awake for the whole thing.
