Traditional Friday Nights

It’s pretty convenient (but kind of dangerous) that Wegman’s is directly on my route to and from work. I stopped by on the way home to pick up a few things, and a few products I haven’t seen caught my eye, including this:

Pretty much like peanut-butter flavored cheese-puffs. Doesn’t that sound appetizing? They are actually pretty good- not sweet at all, but very peanut-flavored.

I also got an assortment of bars (coconut seemed to be the theme- what a surprise!)

The pumpkin bar inspired me to make a Pumpkin Pie smoothie for an afternoon snack. I’m sooo excited for pumpkin season, so I can make my own pumpkin puree from actual pumpkins!

Pumpkin Pie Smoothie

(Amount of ingredients is up to you, depending on how hungry you are!)

Canned pumpkin (it’s best if you freeze it- but I wasn’t patient enough to wait for that)

a bit of frozen spinach (just because I throw spinach in every smoothie)

ice cubes

Vanilla protein powder (I used Jay Robb Egg White protein)

pumpkin pie seasoning (or Cinnamon, Nutmeg, Ginger and Clove)

Blend to perfection!

*Side note- this is the best blender ever (well, aside from a Vitamix, of course). It’s like a magic bullet, but 1,000x better!)

I topped mine with a little bit of the pumpkin bar that I broke off and a few raisins. And a blob of skyr (I love the contrast of plain yogurt on top of a smoothie!) Served in a bowl with a spoon, so that I could actually enjoy it, rather than slurp it down (and I used to think I was the only one who did this!)!

Don't let the green color throw you off- it tastes awesome!

Greg and I have a Friday night tradition: homemade pizza. We’ve been making pizza for Friday night dinners for years (unless we go out- which is rare)- and I look forward to it all week! It’s kind of nice not having to think about what to make and it’s so easy to throw together. I always chop up whatever vegetables are in the fridge:

Green pepper, onion, broccoli, sun-dried tomato, mushroom, zucchini and yellow squash

I roasted the veggies for a bit in the oven, since we were using pre-made “crusts” that wouldn’t need to be in the oven long. Greg had a piece of Naan bread and I used a Flat-out bread. I usually use a different flat bread from Trader Joe’s, but the Flat-Out bread caught my eye at Wegman’s. It was okay.. tasted a little synthetic. And I love thin crust, but this was a little Itoo thin. Didn’t hold up super well with all of the veggies I put on top. The pizza was still pretty good though…

Also on the pizzas: leftover crushed tomatoes from the other night (for the sauce) and Applegate Farm turkey bacon. Greg loaded his pizza wit smoked mozzarella and I used a mix of smoked mozz., Rice Shreds (which melt pretty well and taste awesome) and a little cottage cheese. Basil for the finishing touch!

We ate salads, too.

And Greg was happy that I picked up some Dogfish Pumpkin ale on the way home from work.
